Spent Grain Cookie

So what do you do with a whole lot of spent grain after making beer. Cookies of course. Well I also dried most of it to make spent grain flour for a recipe I found to make pizza but we’ll leave that for later. This is a recipe that I found using oats in the grain bill. I didn’t use oats in the grain bill and I decided not to add any either. My mother law went crazy for them so now I have a perfect reason to brew every week. She says the spent grain cookies remind her of a Latin American cookie she ate in Mexico.
